Green Tea Noodles with Salsa and Tofu

I assume you’re one of the cool kids who are all crazy about Matcha latte nowadays (I’m one of you!). But have you ever eaten Matcha noodles? I found these green tea noodles a few days ago in a supermarket in Tanjong Pagar and just HAD to try them.

At first I was not sure how to prepare them – then I had an idea. Last summer, I went to Berlin and dined at a pretty hip Japanese-Mexican fusion restaurant.  I was surprised how well Japanese products go with Mexican flavours. It’s a refreshing killer combination. Unite your love for avocado and green tea.

For approx. 1 meal
Preparation time: 10 minutes

Green Tea NoodlesStuff to buy:

  • Green Tea Soba noodles (you can use normal ones as well)
  • 1 package of Tofu
  • 1 ripe avocado
  • A handful of cherry tomatoes
  • 1 fresh chili, chopped
  • Black Sesame
  • Dressing: Soy sauce, brown sugar, lime juice, miso paste

Get started:

Cook the noodles, chill them and set aside. Dice the tofu, tomatoes and avocado and sprinkle some salt, lime juice, olive oil and the chopped chili on your salsa.

In a bowl, mix 2 tbs of soy sauce, a dash of brown sugar and lime juice and 1 tbs of miso paste until homogenous. Marinate the noodles with this dressing – allow them to absorb the liquid.

Arrange the noodles on a plate, add the salsa and finish it off with a pinch of sesame. Enjoy!
