Fresh cherry tomatoes in a sweet&sour dressing completed red onions and coriander… I just love a good salsa! It’s ideal for wraps, BBQs, or to accompany tortilla chips. My version is more of an “flavourful salad” than a sauce – if you prefer to have it to be more of a sauce, just chop the tomatoes more finely.
For 1 big bowl (serves 4 people as a part of a meal)
Preparation time: 10 minutes
- ca. 300g cherry tomatoes
- 1 red onion or 1 spring onion
- 2 limes
- 2 tbs brown sugar
- 1/2 package of coriander (also works with parsley)
- 4 tbs olive oil
- A bit of fresh chili (if you like it hot)
Get started:
Cut the tomatoes in half or smaller cubes. Then, finely chop your choice of onions and the coriander. In a bowl, mix the sugar with a dash of salt, add the lime juice. The sugar and salt have to be completely dissolved. Add the cilantro, tomatoes and onions and mix well. Finish off with the olive oil. Enjoy!
Can I use coconut sugar instead of this sugar?

Yes, should not be an issue! You might as well use agave sirup, and I imagine that honey would also be a possibility (if you’re not vegan, of course π)
